most people like to keep around 1200 or less but you can take it up over 1300 for short period i would hold it ther to long. I have a buddy he saw 1450 on his ford.

There's a few guys on here that'll peg their 1600* gauges when they're on the 1/4 mile, or when they're pullin on a tractor pull. Just be sure not to keep it there for more than a few seconds!!! Seems like normally keep it under 1200-1300 like Tyler said. Its the high temps for extended periods of time that'll kill your turbo. Short bursts aren't great for it, but not near as bad.
x3 on what they said. 1200 for extendend periods, but you can go higher for short burst. Mine is one of the ones that goes to 1600 in the quarter mile.

my TST is default set at 1300 (that's the highest that they recommend). That is probably the highest sustained EGT that you would want to see. I have seen over 1500 on mine though. I have read where some guys peg out 2000 degree EGT guages in the 1/4 and while sled pulling.
On edit, this is pre-turbo too....(in the exhaust manifold). Post turbo could be 3-400* lower and you definately would not want to see 1300 post turbo.

My thermocouple is just behind the donut (post turbo) I believe. I have been told not to take it over 1000.... seems about right I guess.

If you put a stock tune back in, take the truck out with a load and run it up a hill as hard as you can. See what the temp tops out at with the stock tune, then you will have an idea of what to watch for. With a tune in it you won't want to run but about 150 degrees more than stock for an extended time.
I have a stock tune in mine right now and i was hitting 1160 degrees coming up a hill empty. That is taken from the manifold.

the highest i have had my LBZ was 1850* but i for extended periods i don't run over 1300-1350* max but since i have the Stage 3 Water/Meth and the BD Manifold i haven't hit over 1550* at the truck pulls..
