Tire/wheel combo questions

I have a 2007.5 Silverado 2500HD ext cab 4x4 Z71 LTZ. It came with the 17" wheel delete such that it has the 16x6.5 wheels with 245x75R16 Duraviz. I am considering converting to 265x75R16 BFG AT's to give a little big bigger tire with a higher load rating as I have a slide-in truck camper. My questions are:

1. Should I simply use the stock 16x6.5 wheels even though BFG recommends 7"-8" wheels for these tires? Any issues anticipated?

2. Or should I invest in some new wheels, either 16x7 or 16x8? Most of these wheels have basically zero offset versus quite a bit of offset on the stock wheels. Which will give me the strongest setup?

3. What will I need to do to properly set up the new tires with respect to the tire pressure monitoring system and the speedometer/odometer setting?

4. The effective final drive ratio will be about 6% higher than stock. I'm assuming gas mileage should be about equal?
