diesel newbie

diesel newbie. I understand how the emission components work except the computer stuff. Can someone explain the tuning and computer related things involved in emission deletes? what is flashing? do all years require an unlocking fee or vin specific things to tune? what brands allow emissions delete tuning? i read spade doesnt allow for delete tuning, do tuners come with pre-programmed tunes or is this something you have to buy additionally or take to someone? any info, suggestions, brands endorsed, etc. would be helpful. can anyone give me a ballpark cost, plan on disconnecting egr and deleting the dpf(unless someone has better suggestion). It will be for a 2017 canyon 2.8
