And before any of you decide to start telling me I'm way over my GVWR of a 2500HD save your fingers as I've carried this thing for 8 years without the truck having any issues (additional springs and air bags plus Bilstein shocks have been added in addition to the wheels/tires) and I did my research back on 2006 before I bought the truck:

Nitto Dura Grappler 285/70r17E tires rated at 3750 each
Supersprings, AirLift air bags
Cognito Leveling kit with Bilstein 5100 shocks
Torklift frame mount tie downs
Titan Class V tow beast
AAM rear axle rated at 10400 lbs
front axle GMC load rating 4800 lbs

Only concern I've ever had are tires and wheels as those are what gets hot especially on a summer trip on the interstate. This rig sits 100% level and does not sway, actually rides like a dream when loaded. Due to the Supersprings it rides like an empty DRW when unloaded

OK so on an RV forum someone stated "there is a federal reg limiting 17's and that is why tires are dropping from 37xx and 39xx to 3195lbs"! I thought this sounded ridiculous but in looking at these screenshots from Toyo's website maybe it's true. Notice how every tire size from a 245/75R17E to a 35x12.5E is rated at 3195! Since load rating is a calculation using air volume, heat and tire design this makes no sense. In both 16" and 18" the loads climb as the sizes go up. These are all Toyo Open Country AT2 tires?

Some congressman decided that going forward all 17" wheels will be for 3/4 ton trucks and 1 ton must have 18" wheels and they were too late in the game to make all the tire mfg change there 16" ratings?

So I've nailed down my tire choice to the Open Country AT2 Extreme 295/75R16E or the BFG KO2 285/75R16E. Both meet my minimum load requirements of 3750, both have 3 ply sidewalls(note that the Toyo OC AT2 is only 2 Ply for 285 and smaller so 285/75R16E is out) and both have good reviews for snow (BFG actually rated for severe snow). I had written the Toyo OC AT2 off until I found out more about the Extreme (XT) versions which are only available in certain sizes. These have deeper tread and better reviews than the non Extreme versions. The Toyo is slightly bigger (33.4" x 11.6") than the KO2 (32.8" x 11.2") and rated higher at 3970. I've fit two different sets of 285s to date, may need to take a close look to see how much room I have to spare for an additional 1/4" front/back and width.

I found two similar angled pics online, which tread design would you choose for snow covered roads (not just wintery conditions but travel before the plows). To me it looks like the BFG side lugs will clean snow better but the center lugs of the Toyo may clear better. May simply come down to fit though, I know the BFG will fit. Both are very affordable at around $200/tire, I may get 5 and rotate all in so to extend my tire replacement duration this time around.

I have BFG AT KO2s on my rig. Night and day difference between them and previous Nitto Terra Grapplers. I only had to use 4WD once this winter, and that was after 18"s. The BFGs are super quiet compared to the Nittos. Can't wait to tow the 5th wheel with them.
